My name is RYE, I'm considered to be an incredibly healthy grain but I'm also extremely old (ancient times old). While I'm similar in composition as wheat, I have less starch and crude protein but more dietary fibre. In addition to the dietary fibre, I contain a wide range of bioactive compounds such as lignans, phenolic acids, alkylresorcinols, phytosterols, trace elements and minerals, folates, tocopherols and other vitamins. Basically I'm packed full of nutritional goodness (even if they're hard to pronounce).
